We too ,  South Carolina ,fish off the Stand Ups. Not big game fish but the small flats fish like Redfish, Trout and Flounder in the back water bays and marshes.  This summer I'll head out on the Ocean side and try my luck. I try to keep it simple; Board , paddle, pole and lures on light tackle..   K.I.S.S. ( Keep It Simple Stupid )

Down here in New Zealand I use a 11'4 Mistral Pacifico SUP, and a plastic basket much the same as this setup: http://www.boardfisher.com/1020inusesuppadkit.html

I'd have to agree with you to keep it simple. KISS. Too much can go wrong too fast!

When I went out 2 weeks ago or so, I had a Saltwater flyrod and reel, trolling rod and also a Spinning rod - looking back, it was just too much gear for one board (plus I ended up bring 6 fish home so it was a mission just keeping the board afloat when paddling back!)

I reckon just one rod with a Fish finder would be the go instead.
