The foil does add quite a bit of stability. Board length more than width also adds stability. A long narrow board will be more stable than a short wide board. It will also be faster through the water and track better.

Since you only weigh 160, no need to go SUP specific. The Futures fin guide is helpful for zeroing in on the type of fin. Then choose the size according to your weight and shop online for the best deal. I had the 7'6 Wide and loved it as a quad. I weigh 165 and was happy with the JL fins that came with it but a set of size medium Futures would have worked just as well if not better.

I would just remove the excess parts and add a fixed handle ($20-$30 on Amazon). It will be lighter and stronger. If you think the blade/shaft might eventually break as well, buy a new paddle. Keep the old one around as a backup.

Icing on the wing only happens on the water where the wing gets wet and then freezes. Temps need to be near or below freezing for icing to happen. I have foiled on a few 35-degree days and had no ice on the wing.  40 degrees is my normal threshold. Below that is usually too cold for me.

The build of a wing is similar to a kite.  Snowkiting has been going on for decades and I have never heard of icing causing problems with kites.
If you are concerned with the coating of the wing, I have used the product Aerospace 303.  It is a uv protectant that makes the kite/wing look brand new.  Think of it like armor all.  In fact I prefer it over armor all for my car.
Perhaps contact BigWinds to get there input.

I use 303 Protectant on all things plastic or rubber. It does make stuff look brand new and protects it from UV. It also prolongs the life of wetsuits both in the sun and in storage. I use it on so many things that I bought a gallon on Amazon. I never thought of using it on my wings. I might give that a try.

In the case of icing, 303 might also help prevent ice from sticking to the fabric. Another non-stick product worth trying is Mclube Sailkote.

First, find the balance point of the board. I typically do this with my SUP paddle. Lay the board deck down on the paddle and find where the "balance" point is. From that balance point, I know that I like the center of my mast approximately 12" back for my foils. Quick and easy and the most reliable way of doing an initial foil placement that I've found.

Very interesting. I never thought of using the balance point on the board. I checked my 6'1 E3 and 12" back is precisely where my Axis mast is centered. On deck, my stance is perfectly centered over the balance point. That's how I've been riding it for the past six months and I'm comfortable there.

I put EZ-Plugs on one of my first boards. Surface prep is very important. They are still holding ten years later. For another board, I went with the soft NSI tie-downs and liked them better. They don't require a flat surface and stick extremely well.

In a downwind board, look for a more surfy, less racey shape. I had the Jimmy Lewis M14 and M12'6. They both picked up waves really early, way outside the lineup. The M12'6 was more maneuverable and better for surfing. The problem with surfing downwind boards is that they have more volume than necessary and are very thick which makes them difficult to turn on a wave.

They are absolutely beautiful boards. Lightweight, well-built, and surf great. I had the 10'6 and wish I hadn't sold it.
