Anyone been lucky enough to have tried the new smaller new deals? I'm considering this as the next step coming down from my 9'2" kalama.

Have you tried calling Dave Boehne?  Tell him you love the Kalama 9' longboard and are considering a 8'6" as your mid length.
I am of similar weight as you and my smallest board is of similar volume to the 8'6".
I wonder how the 8'6" New Deal would go as a single fin or twin (pin).

I reached out to the Malibu owner and learned a bit more.

I have struck out trying to reach Dave but my biggest goal is to not repeat the mistake I made with my quatro carve pro. 8'2" x 29 120l but just too unstable. While the New Deal drops 6l I'm very hopeful, and hearing encouragement about it, that the shape and extra 4" of length should result in better stability than the carve pro.

You mention not repeating the Quatro instability mistake -  my impression of the New Deal is that it is not as stable as the shape suggests.  So going down in volume and hoping for more stability than the Quatro is a gamble.  Maybe a trip to Malibu is a good idea. (When is a trip to Malibu never a good idea?)  For what its worth I have a 9'6"x31"x141L New Deal that you're welcome to throw on a Seattle lake to get a sense.

I’m definitely tempted for the Malibu trip. The stability question is wildly up in the air with a 50/50 split on people saying “way more stable!” And others with the exact opposite thought.

Since stability is a goal, I would ask:
1) Are you looking for more pitch stability (front to back)?
2) Are you looking for more roll stability (side to side)?
3) Are you looking for more yaw stability (tail swing)?
If 1), then a longer board will help
If 2, then a wider board will help (i.e. 8'4" x 30" Quatro Carve Pro). 
if 3) longer board or bigger fins will help.
In my experience roll stability is what I was looking for in non glassy conditions.  Width is your friend.

What wave & water texture conditions would you use this board instead of the Kalama board?

I guess it may be worthwhile to state my WHY along with the answer to this. First off, pitch stability is my issue on the quatro. The front to back balance point feels small for my skill level and I frequently fall straight off the back or front.

Conditions:
Here in Oregon we usually have some wind and it's traditionally short period beach break. I've pushed the Kalama to the point of 10'+ waves but don't find the big stuff particularly fun and have a very strong preference for chest to slightly overhead waves. I almost never fall off the Kalama, I'm extremely confident on it and often find myself pushing the performance element of it as hard as I can, and wishing for more. So, essentially I don't want to stall out on my progression by having a board that's too stable (Kalama) and a board that I'm perpetually falling off of (Quatro). So, my hope is to find a new daily driver. I still want an exceptionally high wave count and don't feel the need to pursue the highest level of performance, but I'd like to find a board that is more performance focused than the Kalama, without having the limitations of the quatro.

I did get ahold of Dave at infinity, but he, like most other shapers, offered more of a vague response to my questions that didn't really give me any answers.

My 2 cents is the 8'6 infinity will have a bigger sweet spot front to back than the quatro due to the longboard nose which has less scoop and wider, and the board is longer. But these are pretty high performance boards with narrow tails and rails so it might be tippier side to side. I would look at it more as something different to try. If you want to progress in sup surf on smaller gear you will have to work for it and be more active with the paddle and your bracing, no free lunch on any board. You can go short and wide like the wide speed and other similar models from the other brands or L41 and that should be pretty stable and fun in beach break.

Took three new boards out on the water today:

8'8" x 32" Starboard Spice (hated it)

9'0" x 28 NSP Super X (Super fun, wished it was a quad)

8'2" x 30 Infinity Blurr V2 (too unstable past the break, but fine to paddle out at 114l)

A bit of a poor testing day, waves were 1-2x overhead but it was a chance to try some alternatives and I walked away with a few solid lessons.

1. I'm far more stable on a longboard than performance shortboard, even if it's a narrow longboard.

2. I was surprised to suddenly realize that I really want a quad fin option.

3. I don't think I'll take a risk on a new deal if I can't ride it first.

The NSP is $1000 cheaper and I get to paddle it ahead of time, so that's where I'm leaning now. However, I still want to try some lower volume longboards to see if they work for me. Kalama makes a 9x28 quad at 106 liters and if I can demo one of those...

That’s great that you are getting some time on these boards. Those Dale Chapman NSPs have a great reputation.  Another interesting one is the redesigned Starboard Longboard SUP. Its not a quad but they have the sides pushed out very near the rail. They are low volume, narrow rails and have flat decks which helps with stability. There is a 9 x 28 x 101 L . I surfed the 10 x 29 x 123L for a while, which was the lowest volume board I’ve ever used (I’m 185Lb) and it was fine. But I learned that I didn’t like swinging that 10’ length around.

Definitely feels good to get some demo days in! The NSP was a gem. First wave on it was a a big steep right, significantly overhead and that board just wanted to play on the face. I just wanted the quad for some extra hold on the lumpier parts of the faces. When it was a smooth face though... just perfect. As far as I know, it's also the ONLY board with those LxW dims at that volume. It was my first experience on a board feeling like I didn't need to move my feet much to make turns. I may rent this again to take out in smaller conditions to see how well I can throw it around. I can also buy the NSP for $1450 new which feels pretty darn good.

I would like to test my lower limit on volume so I know where it is (I'm at 195lbs + wetsuit), and the boards on my list to check out are all 9'x28" now:
Starboard 101l 2+1 fins $2260 and 17lbs
New Deal 104l 2+1 fins $2300 weight unknown (I can rent or borrow this)
Kalama 108l 4+1 fins $1650, free shipping, 15.4lbs (will buy this if the literage doesn't feel too low)

I expect the lower volume to be doable for me, but kind of a dog when it comes to paddling speeds. Spending three more days surfing this coming week and have to decide to take the NSP out for rental round two, or to rent the New Deal for a few days.
