Seriouseats
« on: October 01, 2018, 06:38:26 PM »
Since I'm now responsible for the domestic duties at home I've decided to up my cooking skills. I've always been able to do the basics and some not so basics...I don't have my brothers skills but I can cook a little. Made Mom's apple pie tonight...:)

I've been looking at cooking websites and I found one that I really like...recipes are great and they great info on techniques, gear, gadgets, etc..
Flaming Saganaki with some crusty bread and a bottle of wine sounds pretty good....not a fan of anise however so going with Brandy instead of Ouzo.....:)

You might try Masterclass. You can buy a one year, all you can learn subscription for 95 bucks. The current cuisine instructors are Alice Waters (I'm watching her classes now), Thomas Keller (did that), Gordon Ramsey (did), and Wolfgang Puck (next). I'm also learning about documentaries from Ken Burns and did writing from James Patterson, Malcolm Gladwell, Margret Atwood and Judy Blume. Some of the classes are a bit lightweight and some of the technique shown runs counter to what I think I know, but in general, the quality is as high as it sounds like it might be.

@ stoneaxe

One of my wife's favorite Food Network shows is "The Pioneer Woman" with Ree Drummond. Ree has a lot of great recipes. I know because I like good tasting food and my wife tries out many of Ree's recipes on me.

You can find many of Ree's recipes at the link below.

https://thepioneerwoman.com/cooking_cat/all-pw-recipes/

And the link will cover 48 pages of recipes. Just browse through them and find one (or more) that you find interesting. Then hit the kitchen.

She's pretty cool, I've watched some of her episodes online. But if I ate that kind of cooking very often I'd weigh 1200 pounds. Bob and I are from a family genetically designed to survive famine and still have reserves. Since we don't seem to be having any famines currently we need to eat as if there were one or get very large.

My wife watches her too sometimes...and made a few of her recipes. She's always watching cooking shows and is a great cook...her Mom was a chef.

There's a year or more of learning on serious eats, tons of great content, masterclass can come later once I get past the 101....:). Though I might enroll for some of the other stuff available and Sue would like it as well....$180 /year now

Ain't that the truth bro.....though I've dropped a lot lately....:)

I've eaten many of Ree's recipes my wife has made. They are delicious. When it comes to food, I'm lucky I have a small skeletal structure. Combine that with the skinny gene I inherited from both of my deceased parents and I just don't seem to gain very much weight.

Last December 7th of 2017 when I ordered my 11'1" One World sup, I weighed 146 lbs. After a visit to my nephrologist (fancy name for a kidney specialist) two weeks ago, they weighed me at the office on their official weight scale and I tipped their scale at 144 lbs. I'm more active during the late Spring, Summer and early Fall months and this is the reason I dropped 2 lbs from last December.

That night at dinner, my wife cooked us a nice meal of ribeye steaks, baked "loaded" red potatoes (butter, sour cream, cheese, chives, real bacon bits), charro beans and all washed down with a Ziegenbock amber colored lager beer for me and my wife had a St Arnold Oktoberfest amber colored beer.

Yeah we have a slightly different makeup......last time I was 140 lbs I'd guess was when I was around 9 or 10

That sound like a great dinner...love me some ribeye and what isn't better with bacon....:)

I'm cooking a lasagna as I type this. Not from a recipe...just making it up but you really can't screw up lasagna. My wife tried using won ton wrappers for lasagna noodles once. that's all we use now unless we make some noodles (rare)

I stopped eating any food with "won ton" in its name after reading that you are what you eat.
