Cut down a wooden paddle question

What should I use to seal the wood after i cit and sand it? spare varnish, poly-urethane, something else?

I think my Malama was sealed with polyester resin.

I sealed my cutdown glass C4 with two part epoxy. Pretty much brushed it on with my finger, let it cure and it's holding up very well.

Two part epoxy is best. Much tougher than varnish or polyurethane and not as brittle as polyester resins.
