I find it very useful to look at the GPS tracks afterwards.  I use a cool program called GPS action replay to analyze the tracks and calculate averages/ peak speeds/ best nautical mile/ etc.  If you are doing comparative GPS testing GPSar is the call.

It keeps track of the number of times I have run it and between SUP, windsurf and trimaran tracks, I have used it 194 times. hehe... thats a lot of tracks....

I saw this one at outdoor retailer show yesterday,  looks like they have been in paddle sports for a few years, the device like good.
