Camelbak Tahoe with an MTI fluid PFD. I like the Tahoe for longer outings.

I have used the Thule bars (European Standard or rectangular) for about 12 years and loved them until I got the Aeroblade bars. Best thing ever! They are quiet, have more stability for things like Yakima Bowdowns or Thule Hull-a-port Pros. Thule makes an aero pad for use with your boards. I use an SUP Taxi and I think that it is overkill. JMO. With the 53 inch bars, I have enough width to carry 5 bikes. I was using 65 inch rectangular loadbars previously. Most of the Thule stuff is Made in the USA.

I took a few kids out to Sterling State park and had the beach and waves to ourselves. 70+ degree water and about 5-8 inches LOL. Two kids had never seen a SUP before, one was a natural and one struggled.
I got a few rides in but really enjoyed seeing the little ones get there first stoke. 8

Why not get a Laird? The Laird would be far better in the surf than the Universal. I can't imagine trying to ride on one of the universals thick rails. The 12'1" seems like the obvious choice.

The Universal has the full deck pad. It can make it a little tough to attach a tie down. I just saw the 10'6" Wahine and it was very nice looking. Light and nuke proof. I suggest the Bic.

I second the Thule Get-a-Grip. I've had four paddles on it for 300+ miles with no problems. The locking function is slick.
