Hello all. Advice needed please. I am a newbie SUP'er who will be paddling on a calm lake in the Midwest.
I have the option to buy at Surf Industries 7S Uber Fish (9' 8'') for $950 or a Surftech Laird Hamilton Soft Top 10' for $900.
Which would you choose, and why? I'm 6'2, 185 and pretty athletic, but as I said, not a surfer.
Also, what's a good beginner paddle?
Any/all input welcome.

Man, I'd offer that you'll have a lot more fun on a longer board for flat water. The glide on a 10' is just not gonna be the same.
But to answer your question, I have not ridden the 7S but the Laird 10' is one of my favorite boards out of my recent round of demos.
What says the rest of the clan here?

get the laird - its a great board and suited to what you want
and can surf if you ever want to
ive seen the uber fish but not ridden it - all te reviews
i have seen were negative - it was an experiment in the development
of shorter surf style boards which didnt really work - it certainly
was never meant to be a flat water board
if only flat water go longer (and maybe narrower) for glide so maybe
a longer version of the surftech might suit even better

Great advice, thank you. So you think that a bigger version of the Laird would be a lot better for flat water? Are there any other boards that I should consider for around a grand?
Also, what's a decent entry-level paddle that won't be completely useless?

Yeah the 12'1 Laird will be a lot easier to learn on than the 10'0 Laird, more to do with the width of the boards.

in general
wider boards are more stable but have less glide
longer boards are more stable and have more glide
but thickness outline and rocker etc have a big effect as well
smaller lighter boards are more manoueverable (and easier to carry
and store)
