Tons of places... most tend to get windy mid morning so I'd suggest early sessions. I first started at Kanaha since I lived nearby...  Would paddle upwind from the lifeguard stand up to Camp One or Sprecks then downwind as it gets windy.

I also go to Thousand Peaks alot but it is pretty shallow for beginners.... If its glassy, you can just paddle outside and lots of area to paddle.  Launi's is good too, more protected from the wind, easy launch but also sometimes pretty shallow.  New favorite place is Puamana Park. You can paddle either direction and go for distance which I'd reccommend for a few sessions at least.

Never paddled Kihei side so can't recommend anywhere there.

Have fun...

Here are some thoughts to add to Noworries' suggestions (which were terrific).

Check the Cove Park cam http://theshoresofmaui.viewnetcam.com/CgiStart?page=Single (http://theshoresofmaui.viewnetcam.com/CgiStart?page=Single) to see what it is doing Kihei side.  If there is wind there, often there is none at Launiopoko (or the opposite).  Both the Cove and Launio are great spots to paddle flat water.

Check the Kanaha cams for an idea of the wind and water over there http://www.mauiwindcam.com/liveView/kanaha/ (http://www.mauiwindcam.com/liveView/kanaha/).

Today for instance, Kanaha was blasting, but Launio was pretty smooth.

Hope that helps.

Rand

I did my first sessions on the Keihi side between the Maui Sunset and the Cove. It was in the summertime and I got out around 8:00 am. I found tiny waves and almost no wind. Excellent conditions to start in. IMHO.
