While I doubt anyone cares much other than myself, some followup:

Bought 110-liter board. Was slightly worried about volume, as I'm about 225-230, add wetsuit and paddle and we're getting close to the theoretical floatation provided by the 110 liter board (242 lbs.)

On board, paddling quickly or slowly (OK, the thing is never that quick...) - totally fine. Water around ankles, sometimes.

Paddling very slowly or still - sinkage begins to occur. Levels out with tail under, nose up. Other SUP'ers look at me with incredulity.

Since I often do three hour+ surf seshes, I definitely sit down between sets. However, found that my endurance for paddling the thing definitely increased significantly over a week.

On the wave: YEEHAW!

It's really incredible how small a board you can paddle with some practice. If I can drop thirty pounds, I'd be looking at an even smaller board!

I'm close to the above on my smallest.  Probably clocking in at 220-225 in full winter gear w/ paddle on a 105ltr.   Sit between sets, only use in glassy conditions and have to paddle to stay standing.

NorthJerz you gotta try the 8'2" Rivy El Tigre El Gordo model.  South End in Beach Haven probably has a demo.  119 Liters and it the rocker is just perfect.  Stable, generates lots of speed and turns awesome once you get it dialed in with the right fins. Way different board than the 8'8".

I've been really enjoying taking steps down in volume and have been surprised with each step at it not being as hard as I thought it would be. I'm definitely not at 1:1 V/W yet, but am still OK moving towards it.  I really like have the rails underwater.

Here's a cool post for those interested....

Wow. Capo
Thanks! Not to hijack but the 8'8 has been my 'step up' for clean winter stuff. But the same volume with less length for smaller days that would allow me to work the wave more would be awesome. Advice taken!
