What is the bottom of your current board like?  Is it slightly rounded?  Or flat?  I am 6' 1" and around 195 lbs.  Any time that I get on a board with a slightly rounded bottom, no matter what the width or volume, it do not have a good time.  I'll know pretty quick if my legs start giving out after about a mile of paddling hard, or if I'm dealing with chop, slop or boat wakes.  I've run into the slightly rounded bottoms on an older Fanatic Fly 14 Race and older Hovie Comet.  I think that one year, the JL boards experimented with slightly rounded bottoms as well.  For some folks, they feel faster and handle great, for others like me, not so much.  Also volume can be a factor, especially where they put the volume.  On a 2015 Bark Dominator 14' with about 285L, I was sinking the tail or burying the nose and it felt tippy.  Then I hopped on a Bark Laird 14' with about 275 L, and it's been the best thing for me.

Just curious what you guys think about the Bote Ahab. It's 14' long 34"wide and supports up to 500 pounds. I've been seriously considering it since I'm a big guy "6'3" 240". I love the way you can set it up for fishing and touring,  would love some honest feedback. Thanks.

I doubt there are many SUP riders out there with worse balance than mine. It's all (or mostly) about the bottom and how the volume is distributed for me. As weeble said, rounded bottoms change everything. If a board relies on secondary stability in its design I give it a pass. I've tried enough to know its not going to work. For pure flatwater paddling without a struggle I'd suggest you look at 12' or 14'ers with flat or at least not rounded bottoms and some volume in the rails.
Fins can definitely change a boards stability. You might try one of Larry's big Gladiators or a JL Great White if you can find one.

The fishing boards would make sense for a stable platform I would think.....

I'm going to check out a NSP Cocomat 11'6" cruiser today.  It's a bit more than I want to spend but it's 33" wide.  Will be sure to check out the bottom's shape.  Same shop also has a King's Knight, which I want to fondle.

Just out of curiosity, can you get up on your board and just look at the horizon with only an occasional glance at the board?  I'm just trying to save you some money.  All the boards suggested would be a bit more stable but at your dimensions, what you have should work with the right technique.

I'm a huge fan of having the right width and stability for the rider and conditions.  My boards are unbashfully wide, just like I want them to be. No board suggestions from me, but I will say that you should find the widest board that holds your interest, demo it, and scale down from there if necessary.
