Paddling against the wind...the rails

Been reading a few posts on upwind/crosswind paddling. A few different views so wondering if there is such a  thing as best practice here.

Seems to be some debate on whether tacking across is better than straightforward head on paddling. I can see both benefits but do feel slightly side on is hard, bloody hard, to keep the board straight.

Can I also get a good steer on which rail to weight more if the wind is slightly side on....do you weight the  rails on the opposite side to which the wind is blowing and paddle that side? Thanks....I hear there is quite an art to this.

IMO.. you put more weight on the downwind rail to help the board turn more into the wind while also paddling on the downwind side of the board.
